Bulgar Salad with Spiced Cumin Dressing – adapted from Smitten Kitchen


Why is it that every vegetarian dish has chickpeas? I got a little concerned with our massive use of chickpeas and spinach this week, so we attempted to switch it up as best as possible. To the bulgar salad, we added mung beans and chickpeas, but not too many. I also added like 3 cups of parsley…one can never have enough herbs.

Okay, this is a REALLY bad photo. I clearly was in a rush today. Anyway, we pretty much followed this recipe to the “T.” I think we maybe added avocado, but I can’t remember. Anyway, both dishes for the day were full of spices and were a great success for the hungry stomach.
Whole Wheat Double Chocolate Coffee Cookies – super loosely adapted from Tom Saaristo

I changed this recipe in more ways than I want to admit. I didn’t have chocolate covered espresso beans, nor did I have espresso. So, I used coffee grounds instead and just way more chocolate. I also added a little kanel (cinnamon) which I’m obsessed with and some cayenne for a little kick.
